INGREDIENTS
- 500g sweet potato peeled, cut into 2cm pieces
- 4 slices bacon diced
- 100g spinach leaves
- 1 small red onion
- 100g feta
- olive oil
- 1tbs dried thyme
- 1/3 cup grated cheese
- 8 eggs
- 3/4 cup cream
- salt & pepper
METHOD
STEP 1
Preheat oven to 200°C and roast sweet potato in oil and thyme until golden.
STEP 2
Turn oven back to 180°C /160°C fan forced. Line baking dish.
STEP 3
In a pan cook the bacon until lightly browned, remove and place on paper towel to drain.
STEP 4
Into your prepared dish add a layer of sweet potato, a layer of red onion, crumble the feta and add the bacon.
STEP 5
In a bowl whisk the eggs, cream, salt & pepper. Pour over the layers in your prepared dish and sprinkle with cheese.
STEP 6
Bake for approx 50mins and serve immediately with your favourite salad.
