It’s all in the details! A traditional glaze to tie the Christmas feast together.

INGREDIENTS
- 1/2 cup brown sugar, firmly packed
- 1/2 cup honey
- whole cloves
- 1/2 cup maple syrup
- 1 tsp dry mustard
- 5.5kg ham
METHOD
STEP 1
Preheat the oven to 150°C (300°F). Remove any packaging or netting from the ham. Trim away the rind and discard. Set the ham aside to rest at room temperature for 1 hour.
STEP 2
Cut the fat of the ham into diamonds then stud diamonds with cloves.
STEP 3
Mix all ingredients (except cloves) into a bowl.
STEP 4
Brush ham with 1/3 of the glaze then place ham into the lowest rack of the oven and remove all other racks.
STEP 5
Bake for 1-1.5 hours, brushing every 25 minutes with glaze.
STEP 6
Allow the ham to rest for 10-20 minutes before slicing.
