Sweet Potato, Bacon & Spinach Frittata

The easiest tastiest Frittata recipe!


  • 500g sweet potato peeled, cut into 2cm pieces
  • 4 slices bacon diced
  • 100g spinach leaves
  • 1 small red onion
  • 100g feta
  • olive oil
  • 1tbs dried thyme
  • 1/3 cup grated cheese
  • 8 eggs
  • 3/4 cup cream
  • salt & pepper



Step 1

Pre heat oven to 200 degrees and roast sweet potato in oil and thyme until golden

Step 2

Turn oven back to 180 degrees /160 degrees fan forced

Line baking dish

Step 3

In a pan cook the bacon until lightly browned, remove and place on paper towel to drain.

Step 4

Into your prepared dish add a layer of sweet potato, a layer of red onion, crumble the feta and add the bacon

Step 5

In a bowl wisk the eggs, cream, salt & pepper

Pour over the layers in your prepared dish & sprinkle with cheese

Step 6

Bake for approx 50mins & serve immediately with your favourite salad
